Because of the vast information on health benefits and urbanization impact changes in eating habits, demand for ready-to-use shelled walnuts as a convenient, healthy, nutritious snack food is increasing all over world. However, nuts sold halves or pieces ‘ready-to-use’ small packages are more susceptible to pellicle darkening rancidity than their in-shell equivalents. Currently, about two-thirds USA crop exported, ~66% these exports ‘ready use’, its increasing. Yet, this package style generating quality challenges due rancidification kernel pellicle. Protection against color loss during postharvest handling, even at warm temperatures, can be accomplished 6 kPa (%) oxygen less ‘Chandler’ 3 ‘Howard’ ‘Tulare’.
